Ingredients:

  1. 3 cups old-fashioned oats
  2. 1 cup mixed nuts (almonds, pecans, walnuts), roughly chopped
  3. 1/2 cup pumpkin seeds
  4. 1/2 cup sunflower seeds
  5. 1/2 cup unsweetened coconut flakes
  6. 1/2 cup pure maple syrup
  7. 1/2 cup coconut oil, melted
  8. 1 tsp vanilla extract
  9. 1 tsp cinnamon
  10. 1/2 tsp salt
  11. 1 cup mixed berries (strawberries, blueberries, raspberries)

Instructions:

  1. Preheat the oven to 300°F and line a large baking sheet with parchment paper.
  2. In a large bowl, mix together the oats, nuts, seeds, and coconut flakes.
  3. In a separate bowl, whisk together the maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt.
  4. Pour the wet mixture over the dry ingredients and mix until evenly coated.
  5. Spread the mixture evenly on the prepared baking sheet and bake for 25-30 minutes, stirring every 10 minutes, until golden brown.
  6. Remove from the oven and let cool completely on the baking sheet.
  7. Once cooled, add in the mixed berries and stir to combine.
  8. Store in an airtight container at room temperature for up to two weeks.
